Ingredients

  • Makes 2 servings

    2 slices bread of choice (whole wheat, sourdough, Challah, etc.)

    OPTIONAL: 2-4 teaspoons Extra Virgin Olive Oil

    2 teaspoons Dijon mustard

    4 slices prosciutto (or shaved ham of your your choice from the deli)

    1/2 cup shredded Gruyere cheese, packed

    3 tablespoons RANA Alfredo Sauce (in Deli), or of your choice

    2 pinches ground nutmeg

    2 large eggs + 2 teaspoons Extra Virgin Olive Oil

     

Instructions

  1. Preheat oven or toaster oven to 400-degrees. Line a baking dish with parchment paper. Toast your bread slices if desired or brush about 1 teaspoon olive oil per side for each piece of bread and brown in a nonstick skillet over medium heat.
  2. Place toast on prepared baking dish. Spread about 1 teaspoon Dijon mustard on top of each toasted slice then top each with 2 slices of prosciutto, crumple each slice up so it covers half the toast but has some height in places. Sprinkle 1/4 cup shredded gruyere over the top of each. Spread 1 1/2 tablespoons of the Alfredo sauce and a pinch or two of nutmeg over each sandwich.
  3. Bake about 10 minutes then broil if desired, watching carefully, until bubbly and golden on top (about 2 minutes).
  4. While the sandwich is baking, you can make your fried egg anyway you like it. For sunny side up eggs, bring a 9-inch nonstick frypan to medium heat. brush an oval shape on each side of the pan with a teaspoon of olive oil. Crack an egg over each oval. Cook for about 2-3 minutes, spooning an excess oil over the top side of the egg and egg yolk as it cooks. Sprinkle with black pepper if desired.
  5. Top each of the sandwiches with an egg and ENJOY!

Thanks for the question! Somehow that last sentence got cut off. I've added it now above. But just in case after you sprinkle the cheese over the prosciutto here's the next step:

Spread 1 1/2 tablespoons of the Alfredo sauce and a pinch or two of nutmeg over each sandwich.
