2 slices bread of choice (whole wheat, sourdough, Challah, etc.)
OPTIONAL: 2-4 teaspoons Extra Virgin Olive Oil
2 teaspoons Dijon mustard
4 slices prosciutto (or shaved ham of your your choice from the deli)
1/2 cup shredded Gruyere cheese, packed
3 tablespoons RANA Alfredo Sauce (in Deli), or of your choice
2 pinches ground nutmeg
2 large eggs + 2 teaspoons Extra Virgin Olive Oil
Preheat oven or toaster oven to 400-degrees. Line a baking dish with parchment paper. Toast your bread slices if desired or brush about 1 teaspoon olive oil per side for each piece of bread and brown in a nonstick skillet over medium heat.
Place toast on prepared baking dish. Spread about 1 teaspoon Dijon mustard on top of each toasted slice then top each with 2 slices of prosciutto, crumple each slice up so it covers half the toast but has some height in places. Sprinkle 1/4 cup shredded gruyere over the top of each. Spread 1 1/2 tablespoons of the Alfredo sauce and a pinch or two of nutmeg over each sandwich.
Bake about 10 minutes then broil if desired, watching carefully, until bubbly and golden on top (about 2 minutes).
While the sandwich is baking, you can make your fried egg anyway you like it. For sunny side up eggs, bring a 9-inch nonstick frypan to medium heat. brush an oval shape on each side of the pan with a teaspoon of olive oil. Crack an egg over each oval. Cook for about 2-3 minutes, spooning an excess oil over the top side of the egg and egg yolk as it cooks. Sprinkle with black pepper if desired.
