Makes about 6 cups
Ingredients
24-ounce bag Signature Farms Mini Gold Potatoes
1/3 cup mayonnaise of choice
1/3 cup plain Greek yogurt
1 tablespoon granulated sugar
1 tablespoon prepared mustard
1 tablespoon apple cider vinegar
1/2 teaspoon smoked salt
1/4 teaspoon black pepper (more to taste)
2 hard-boiled eggs, chopped
1/3 cup chopped onion of choice
3/4 cup chopped celery (about 3 ribs)
OPTIONAL: a pinch or two smoked paprika (or paprika)
Instructions
- Pierce potatoes and place on microwave-safe plate and microwave, using potato setting, until tender. Cool about 10 minutes until slightly warm.
- Meanwhile, make the dressing by whisking mayo, yogurt, sugar, mustard, vinegar, smoked salt, and pepper in a serving bowl. Gently fold the warm potatoes, along with eggs, onion and celery. Cover and chill until ready to serve (at least 2 hours).
- Sprinkle the top with paprika if desired and serve!
