Makes about 6 cups


24-ounce bag Signature Farms Mini Gold Potatoes

1/3 cup mayonnaise of choice

1/3 cup plain Greek yogurt

1 tablespoon granulated sugar

1 tablespoon prepared mustard

1 tablespoon apple cider vinegar

1/2 teaspoon smoked salt

1/4 teaspoon black pepper (more to taste)

2 hard-boiled eggs, chopped

1/3 cup chopped onion of choice

3/4 cup chopped celery (about 3 ribs)

OPTIONAL: a pinch or two smoked paprika (or paprika)



  1. Pierce potatoes and place on microwave-safe plate and microwave, using potato setting, until tender. Cool about 10 minutes until slightly warm.
  2. Meanwhile, make the dressing by whisking mayo, yogurt, sugar, mustard, vinegar, smoked salt, and pepper in a serving bowl. Gently fold the warm potatoes, along with eggs, onion and celery. Cover and chill until ready to serve (at least 2 hours).
  3. Sprinkle the top with paprika if desired and serve!
