Ingredients
Makes 3 servings
5-6 ounces uncooked sausage or ground beef, turkey, or plant based crumbles
1/3 cup chopped onion (whatever type you’ve got on hand)
1 1/2 cups pasta sauce of choice
1/4 cup wine of choice (or broth or water)
1 1/2 – 2 cups lightly cooked bite size veggies (broccoli or cauliflower florets, mushrooms, red bell peppers, celery, carrot, asparagus tips, etc.)
2 1/4 - 3 cups cooked noodles of choice
GARNISH: freshly grated Parmesan and fresh herbs if desired
Instructions
Start cooking your noodles if you haven’t already cooked them.
- Heat a medium, nonstick skillet over medium heat. Cook the sausage (or ground meat) and onion, crumbling it as you cook it, until meat is cooked throughout. (I usually use a lean sausage or ground meat so there aren’t usually any drippings to drain off). Stir in the pasta sauce, wine, and veggies and bring to a simmer. Reduce heat to maintain the simmer, cover the skillet and let the flavors all blend together for about 2 minutes.
- Serve each serving of sauce over about 3/4 to 1 cup of your noodles of choice and garnish each serving with Parmesan and fresh herbs!
