Ingredients

  • 1 (5 oz) pkg baby spinach
  • 1 ½ lb lean ground beef
  • 1 lb sweet potato
  • 2 tomatoes
  • black pepper
  • Dijon mustard
  • garlic powder
  • mayonnaise
  • salt
  • virgin coconut oil
  • Worcestershire sauce

Instructions

  1. Wash and dry the fresh produce. (Skip the spinach if it came pre-washed.)
    • 1 lb sweet potatoes
    • 2 tomatoes
    • 1 (5 oz) pkg baby spinach
  2. Preheat a grill pan or skillet over medium-high heat.
  3. In a large bowl, combine the ground beef, Worcestershire, Dijon, garlic powder, salt, and black pepper; mix well.
    • 1 ½ lb lean ground beef
    • 2 tsp Worcestershire sauce
    • 2 tsp Dijon mustard
    • 1 tsp garlic powder
    • 1 tsp salt
    • ½ tsp black pepper
  4. Form the beef mixture into 8 patties.
  5. Once the pan / skillet is hot, add coconut oil and swirl to coat the bottom.
    • 2 tbsp virgin coconut oil
  6. Add the beef patties to the pan / skillet; cook until they are cooked through, 3 to 5 minutes per side. Once done, transfer to a plate.
  7. Preheat a sauté pan over medium heat.
  8. Peel and small dice the potatoes.
  9. Once the sauté pan is hot, add coconut oil and swirl to coat the bottom.
    • 2 tbsp virgin coconut oil
  10. Add the diced potatoes to the pan and season with salt and pepper. Cook, stirring occasionally, until tender and lightly browned, 6 to 8 minutes.
    • ½ tsp salt
    • ¼ tsp black pepper
  11. Slice the tomatoes into rounds.
  12. To serve, arrange a bed of spinach on a plate and top with tomato slices, burger patties, and some mayo. Add the sweet potatoes on the side. Enjoy!
    • 2 tbsp mayonnaise
