Ingredients:

Use a serrated knife to cut the tomato and cheese into slices.

Makes 4 servings

1 very large vine ripened tomato, sliced (about 8 slices)

8-ounce ball of Primo Taglio fresh mozzarella, sliced (about 8 slices)

about 24 leaves of O Organics fresh basil, gently rinsed and patted dry

cracked black pepper

OPTIONAL: 1 pinch pink Himalayan salt

1 tablespoon Balsamic vinegar (flavored if desired) or Glaze

 

Instructions

  1. In a rectangle serving dish about 11-inches long, alternate tomato slices with mozzarella slices starting from one end of the dish and making your way to the other end of the dish.
  2. Place several basil leaves between each mozzarella and tomato slice combination then sprinkle freshly ground black pepper (and salt if desired) over the entire dish. Cover and refrigerate until ready to serve.
  3. When ready to serve, drizzle balsamic vinegar or Glaze over the top. ENJOY!

I used the leftovers to make a Caprese Grilled Cheese the next day!
