Ingredients

  • 1 (5 oz) pkg baby spinach
  • 4 cloves garlic
  • 12 oz linguine pasta
  • 1 oz Parmesan cheese
  • ½ cup plain Greek yogurt
  • 12 sun-dried tomatoes, oil-packed
  • 2 (8 oz) cans tomato sauce
  • 1 medium yellow onion
  • basil, dried
  • black pepper
  • crushed red pepper
  • extra virgin olive oil
  • salt

Instructions

  1. Fill a large pot halfway with water, cover, and bring to a boil. Uncover, add salt and pasta, and stir for a few seconds. Cook until desired firmness, 8-10 minutes.

  2. Heat a sauté pan over medium heat.
  3. Peel and small dice onion. Peel and mince garlic. Thinly slice sun-dried tomatoes.

  4. Coat bottom of pan with oil. Add onion, garlic, tomatoes, and crushed red pepper. Stirring frequently, cook until onion is softened, 3-4 minutes.

    • ¼ tsp crushed red pepper
  5. Wash and dry spinach.
    • 1 (5 oz) pkg baby spinach
  6. Add tomato sauce, basil, salt, and pepper to pan. Stir to combine and simmer for 3-4 minutes.
    • 2 (8 oz) cans tomato sauce
    • ½ tsp basil
    • ½ tsp salt
    • ¼ tsp black pepper
  7. Finely grate ¼ cup of Parmesan.
    • 1 oz Parmesan cheese
  8. Add yogurt to pan, reduce heat to medium-low, and stir to combine.
    • ½ cup plain Greek yogurt
  9. Add spinach and fold in until wilted. Remove pan from heat until pasta is ready.
  10. Drain pasta in a colander, reserving about 1 cup of the pasta water.
  11. Add pasta and ½ of the water to sauce; toss to coat. If sauce is too thick, add more pasta water to thin it out.
  12. Place pasta in a bowl or on a plate and garnish with grated Parmesan.
