Ingredients

  • Makes 9 servings

    1 cup whole wheat flour + 1/2 cup unbleached white flour

    2/3 cup granulated or brown sugar

    1/4 cup unsweetened cocoa powder

    1 teaspoon baking soda

    1/2 teaspoon salt

    1/3 cup vegetable oil of choice

    1 tablespoon vinegar of choice

    1 teaspoon vanilla paste or extract

    1 cup cold brewed decaf coffee (or 1 tablespoon instant decaf coffee stirred with 1 cup  cold water), or just cold water

    OPTIONAL: 1/2 cup chocolate chips or chunks of your choice (chopped up Andes mints, M&Ms, etc. work great too!)

    OPTIONAL TOPPINGS: powdered sugar, whipped cream or topping, fresh fruit, frosting or glaze of choice.

Instructions

STEP 1

 

Preheat oven to 350-degrees. Coat an 8-inch square baking dish (or similar) with cooking spray.

STEP 2  Add flours, sugar, cocoa powder, baking soda and salt to a large bowl and whisk to blend well. Make one large well and two small wells in the dry ingredients. Pour oil into the large well, and the vinegar and vanilla into the small wells.

  1. Slowly pour the cold coffee or water over the ingredients in the bowl and whisk until everything is blended into a smooth batter. Stir in any desired chips or chunks.
  2. Pour evenly into the prepared pan and bake until toothpick inserted in center comes out clean (about 30 minutes). Let cake cool then dust with powdered sugar if desired or serve with any toppings of your choice, including fresh fruit.

Gosh, I remember making the original version of this years ago. I love your changes, especially using coffee instead of water.
