  • Havarti Dutch Baby

    Makes 4 servings

    2 tablespoons Lucerne whipped butter

    4 large eggs

    1/2 cup whole wheat flour

    1/4 cup unbleached white flour

    2/3 cup low fat milk (or whole milk)

    1 tablespoon granulated sugar

    big pinch smoked salt

    3/4 cup grated/shredded Primo Taglio Havarti with Dill, or Havarti

    OPTIONAL: 1 teaspoon O Organic Herbes de Provence

    OPTIONAL TOPPINGS OF CHOICE: preserves of choice (pear, apricot, raspberry), fresh berries, etc.


  1. Preheat oven to 425-degrees. Place the butter in a 9-inch pie plate and place in the oven until nicely melted (about 5 minutes).
  2. Add the eggs to a mixing bowl and beat briefly to blend. Add in the flours, milk, sugar and smoked salt and beat on medium until pretty smooth. Stir in the cheese.
  3. While the pie plate is nice and hot (after the 5 minutes) immediately pour the egg mixture into the hot pan, on top of the melted butter, and place back in the oven for exactly 20 minutes.
  4. When you take it out of the oven, top it with your toppings of choice and cut into 4 wedges and serve!

Looks so tasty - I might have to give it a try later this week! It's the season for fresh preserves and what a great way to feature them!
