Ingredients

  • 1 (5 oz) pkg baby arugula
  • 6 eggs
  • 4 large flour tortillas
  • 1 lemon
  • black pepper
  • Dijon mustard
  • extra virgin olive oil
  • garlic powder
  • mayonnaise
  • paprika
  • pure maple syrup
  • salt

Instructions

  1. Wash and dry the arugula. (Skip this step if it came pre-washed.)
    • 1 (5 oz) pkg baby arugula
  2. Wash, dry, and zest the lemon into a small bowl, then juice the lemon into a medium bowl.

  3. Add mayonnaise, garlic powder, and paprika to the small bowl with the lemon zest; stir to make the aioli.
    • ¼ cup mayonnaise
    • ½ tsp garlic powder
    • ¼ tsp paprika
  4. Add oil, maple syrup, Dijon, salt, and pepper to the large bowl with the lemon juice; whisk to combine the dressing.
    • 4 tsp extra virgin olive oil
    • 4 tsp pure maple syrup
    • 2 tsp Dijon mustard
    • ⅛ tsp salt
    • ⅛ tsp black pepper
  5. Preheat a nonstick skillet over medium heat.
  6. Crack the eggs into a medium bowl and season with salt and pepper; whisk together.

  7. Once the skillet is hot, add oil and swirl to coat the bottom.
    • 4 tsp extra virgin olive oil
  8. Pour the egg mixture into the skillet. Scramble the eggs using a combination of stirring and flipping, making sure to bring in all the mixture from the edges of the pan. Cook until the eggs are no longer runny.
  9. Add the arugula to the bowl with the dressing and toss to thoroughly coat.
  10. Place tortillas on a flat surface and top with scrambled eggs and arugula salad. Tightly roll to close and serve with aioli. Enjoy!
