I created these yummy pancakes one Sunday morning and I've been obsessed ever since. Create a "cake" with these Mocha Latte Pancakes and it instantly becomes dessert (LOL). For this you can use real whipped cream or alternative whipped cream.
In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt; set aside.
In a separate medium bowl, whisk together egg and sugar until well combined. Whisk in milk, oil, and vanilla. Pour wet ingredients into the dry ingredients and stir just until combined. Let rest for 5 minutes.
Start heating a nonstick griddle or skillet over medium heat. Drop 1/4 cup of batter onto the griddle for each pancake. Cook 1-2 minutes, until the bottom of the pancakes look done. Gently flip them over and cook another minute or two. Repeat with remaining batter.
Serve pancakes with your toppings of choice or make a pancake “cake” by topping one, cooled pancake with a circle of whipped cream then add another cooled pancake and top that with a circle of whipped cream. Continue until you have a pancake “cake” then decorate the top as desired.
