Ingredients

  • 1 (5 oz) pkg baby arugula
  • 2 (15 oz) cans cannellini (white kidney) beans
  • 1 small pkg fresh basil
  • 1 (4 oz) log goat cheese
  • 1 lemon
  • 4 peaches
  • 10 oz penne pasta
  • 1 bunch radish
  • 1 shallot
  • black pepper
  • Dijon mustard
  • extra virgin olive oil
  • honey
  • salt

Instructions

  1. Fill a large pot halfway with water (from the tap), cover, and bring to a boil. Uncover, add salt and pasta, and stir for a few seconds. Cook until desired firmness, 8-10 minutes.

  2. Meanwhile, wash and dry the fresh produce. (Skip the arugula if it came pre-washed.)

    • 4 peaches
    • 1 small pkg fresh basil

  3. Drain and rinse the beans in a colander; set aside to drain further.

  4. Zest and juice lemon into a large bowl. Add oil, Dijon, honey, salt, and pepper; whisk to combine the dressing.
    • 3 tbsp extra virgin olive oil
    • 1 tbsp Dijon mustard
    • 2 tsp honey
    • 1 tsp salt
    • ¼ tsp black pepper
  5. Peel, halve, and slice shallot lengthwise into very thin strips; add to the bowl with the dressing and stir to combine.

  6. Add beans to the bowl.
  7. Trim and thinly slice radishes; add to the bowl.
  8. Quarter peaches lengthwise (around the pit); twist quarters to separate, then remove and discard pits. Medium dice and add to the bowl.
  9. Pick basil leaves off the stems, roll up crosswise, and thinly slice into ribbons. Add to the bowl.
  10. When the pasta is done, drain and rinse under cold water to cool.
  11. Add pasta and arugula to the bowl; toss to combine the pasta salad.
  12. To serve, divide pasta salad between plates or bowls. Crumble goat cheese over top and enjoy!
