Ingredients

  • 4 medium carrots
  • ½ cup medjool dates, pitted
  • ⅔ cup walnuts
  • 8 fl oz whole milk
  • brown sugar
  • cinnamon, ground
  • cloves, ground
  • nutmeg, ground
  • oats, quick cooking
  • salt
  • water

Instructions

  1. Place water and salt in a medium saucepan, cover, and bring to a boil over high heat.

  2. Meanwhile, wash, dry, trim, and peel carrots; coarsely grate.

  4. Once the water is boiling, stir in carrots, dates, oats, and spices. Reduce heat to low, cover, and let simmer, stirring occasionally, until oatmeal reaches desired consistency, 3-5 minutes.

    • 1 tsp cinnamon, ground
    • ¼ tsp cloves, ground
    • ¼ tsp nutmeg, ground
  5. While the oatmeal cooks, roughly chop walnuts.
    • ⅔ cup walnuts
  6. Divide oatmeal between bowls; top with walnuts and sprinkle with sugar. Serve with milk and enjoy!
