Makes 6 appetizer servings (two poppers each)


6 Sweet Mini Peppers, cut in half lengthwise

Half of a 6.5 oz. tub of “rondele Light Garlic & Herbs Spreadable Cheese”

About 1/4 cup toasted chopped walnuts (or other nut) *

OPTIONAL: 2 teaspoons finely chopped fresh parsley

*NOTE: Toast walnuts by putting them in a small nonstick skillet over medium heat (you can drizzle 1/2 teaspoon olive oil over the top if desired) and cook, stirring often, until fragrant and lightly toasted.



  1. Use a small spoon to scrape out the seeds from the half peppers and place them on the serving plate.
  2. Spread or pipe the rondele spreadable cheese into each half.
  3. If desired, toss walnuts with chopped parsley in a small bowl. Sprinkle toasted walnuts (or walnut-parsley blend) over the top of each popper and serve! Alternatively, you can place the poppers in a covered container and keep in the refrigerator until ready to serve
