1/2 cup grated or finely chopped white, yellow or sweet onion, patted dry
3 scallions or green onions, finely chopped (white and part green)
3 tablespoons whole wheat flour (or Gluten Free flour)
3 tablespoon Matzo meal (or Gluten Free cracker crumbs)
1 teaspoon baking powder
2 large eggs, beaten, pasture-raised if available
1/8 teaspoon cayenne pepper
3/4 teaspoon Old Bay seasoning, Seasoning Salt, or salt of choice
1/2 teaspoon white or black pepper
1/4 cup extra virgin olive oil (or canola oil)
