Garnish with plain Greek yogurt and/or apple sauce or apple butter if desired.

Makes about 12 Latkes

Ingredients:

3 cups grated sweet potatoes (including skin)

1/2 cup grated or finely chopped white, yellow or sweet onion, patted dry

3 scallions or green onions, finely chopped (white and part green)

3 tablespoons whole wheat flour (or Gluten Free flour)

3 tablespoon Matzo meal (or Gluten Free cracker crumbs)

1 teaspoon baking powder

2 large eggs, beaten, pasture-raised if available

1/8 teaspoon cayenne pepper

3/4 teaspoon Old Bay seasoning, Seasoning Salt, or salt of choice

1/2 teaspoon white or black pepper

1/4 cup extra virgin olive oil (or canola oil)

Instructions:

  1. Add sweet potato and onion to a medium bowl and toss to blend. Place scallions, whole wheat flour, Matzo meal, baking powder, eggs, cayenne pepper, salt and pepper on top of the sweet potatoes and stir to combine everything well.
  2. Start heating a 12-inch nonstick skillet over medium heat. Add 2 tablespoons of oil then spoon roughly 1/4-cup of the latke batter into the skillet and press down to form a pancake about 3 1/2-inches wide. You should be able to fit 6 latkes in each batch. When underside is nicely browned (2-3 minutes), flip the latkes over and lightly brown the other side (2-3 minutes more).
  3. Repeat step #2 with the remaining 2 tablespoons oil and latke batter. These latkes are delicious on their own but also pair well with plain yogurt and/or apple sauce or butter.
