Makes 6 servings (2 deviled egg halves each)
Ingredients
2 tablespoons plain yogurt
2 tablespoons light mayonnaise
1/2 teaspoon white truffle oil (or similar)
1/4 teaspoon ground mustard
1/8 teaspoon smoked sea salt
1/8 teaspoon smoked paprika
1 pinch garlic powder
1 pinch black pepper
6 hard-boiled large eggs, pasture raised if possible (shells removed)
GARNISH: black sesame seeds, smoked paprika or minced chives or chopped green onion
Instructions
- In a small bowl, whisk the first 8 ingredients together.
- Cut eggs lengthwise in half; remove yolks and set egg white halves on a serving dish. In another bowl, mash the yolks well with a fork then whisk into the yogurt mixture, blending well.
- Spoon or pipe the filling into the egg white halves. Sprinkle black sesame seeds, smoked paprika or chopped chives/green onions over the tops! Cover and store eggs in refrigerator until ready to serve.
