Ingredients

  • 4 mangoes
  • 1 orange
  • ½ cup pistachios, unsalted
  • 1 (15 oz) pkg ricotta cheese
  • honey
  • vanilla extract

Instructions

  1. Wash, dry, zest, and juice orange into a medium bowl.

  2. Add ricotta, honey, and vanilla to the bowl with the orange. Whisk until light, fluffy, and combined.
    • 1 (15 oz) pkg ricotta cheese
    • 2 tbsp honey
    • 1 tsp vanilla extract
  3. Roughly chop pistachios and place in a small bowl.
    • ½ cup pistachios, unsalted
  4. Peel mangoes and slice flesh away from the pit, starting with the flat sides; medium dice.

  5. To serve, divide whipped ricotta between bowls; top with mango and nuts. Enjoy!
