I debated which forum to put this post in, but since I was inspired by the recipe to cook, I'll drop it right here! The Thai Pineapple Fried Rice recipe looked tasty and relatively easy to make, so I shopped the ingredients and made it with relative ease after work. I chose chicken for my protein, but it seems like you could sub in anything based on your preferences. For me, cooking is all about 1/ following the recipe and 2/ timing. Both worked out pretty well. And most importantly, the end product tasted great, my wife enjoyed it-and even took the leftovers to work the next day!
In all honesty @SnacksNSneakers, that looks FABULOUS! And while I would agree you could probably drop in any protein, I'm betting it would be especially terrific with prawns! Just one woman's opinion... ❤️
ps: I'm not sure exactly what I'm looking at but if that's parsley and not scallions, I would most definitely consider adding scallions!
