Baked Fettuccini Alfredo [Family Friendly]

Makes 4+ servings


2 cups uncooked noodle pieces Signature SELECT whole wheat linguine noodles (broken into 3-inch pieces)

2 large eggs, pasture-raised if available

1 cup plain Greek yogurt

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

2 big pinches ground nutmeg

2 cup shredded Jack cheese or Pepper Jack cheese

3-4 cups veggies of choice in bite size florets, slices or cut into 1-inch pieces for asparagus

Black pepper and crushed red pepper to taste


  1. Preheat oven to 350-degrees. Lightly brush the inside of a 2-quart baking dish with the oil of your choice; set aside (or 4-6l individual serving baking dishes).
  2. Cook noodles according to package directions. Meanwhile, add eggs to a large bowl and whisk until blended. Whisk in the yogurt, parmesan cheese, garlic powder and nutmeg. Drain noodles (there should be about 4 cups cooked noodles).
  3. Create your own baked fettuccini by stirring in your desired amount of shredded cheese, veggies and noodles. Spread mixture into prepared baking dish.  If making individual servings, divide the sauce mixture into individual baking dishes and stir in the desired amount of cheese, veggies and noodles.
  4. Cover dish or dishes with lids or foil and bake for 30 minutes or until heated through (check after 20 minutes if using individual baking dishes). Add black pepper and crushed red pepper to taste!
