50% Plant Sloppy Joes (Sloppy Janes)

Dial in the spice that you want with your choice of salsa and the amount of chili powder.

Makes 4 Servings


8 ounces sliced mushrooms, about 4 cups (baby bellas, crimini or white buttons)

8 ounces grass-fed ground beef (7% or 15% fat)

2/3 cup chopped white onions or green onions (white and part green)

2/3 cup finely chopped bell pepper

1 1/2 teaspoons minced or chopped garlic (or 3/4 teaspoons garlic powder)

1 teaspoon paprika, regular or smoked paprika

1/2 cup ketchup

2 tablespoons prepared mustard

1/4 cup salsa from jar or fresh (your choice spice level)

1/2 cup non-alcoholic beer (water or low sodium broth can be used)

1 – 1 1/2 teaspoons chili powder

Black pepper to taste (1/4-1/2 teaspoon)

2 to 4 whole wheat hamburger buns

OPTIONAL: 4 ounces shredded cheese of choice


  1. Add mushrooms to a food processor (or similar) and chop into small pieces.
  2. In a nonstick skillet or frying pan, brown beef, mushrooms, bell pepper and onion over medium heat. While meat is cooking, you can make your Sloppy Jane sauce by blending the next seven ingredients together in a small bowl. When meat is nicely browned, stir in the sauce and simmer for a few minutes on low heat. Add pepper to taste.
  3. While meat is simmering, toast buns (or bread slices) if desired. Spoon beef mixture onto buns (serve open-faced to reduce the carbs or like a hamburger). Top with grated cheese if desired.
