Here are a few examples and a recipe I just posted (link at the end) is the perfect example:
* tuna or chicken salad in a half avocado or a half tomato or apple!
* chili served in a half sweetpotato or potato (it makes the chili go further)
* sweet mini peppers are vessels for spreads and dip
* bell peppers are vessels for rice casseroles and similar
* mushroom caps and portobella mushrooms are awesome for shrimp or cheese mixtures!
