TREE.PNGChristmas Tree Charcuterie

Makes 4-6 servings

Ingredients:

Primo Taglio Brie round (8 oz) or wedge

Basil pesto (available in the deli with pasta)

Thick slice white cheddar (or other white cheese) cut into a star

Signature SELECT round crackers of choice (Wheat, Everything, etc.)

Primo Taglio 8 ounces Goat Cheese

1/2 cup chopped pistachios

4 ounces sliced turkey (sliced for rolling)

8 ounces Signature Reserve Sweet Red Peppers, drained

6 asparagus spears, marinated or lightly cooked

Caprese skewers (cherry tomatoes, fresh basil, Mini fresh mozzarella balls, balsamic vinegar)

Chocolate dipped strawberries or strawberries

Broccoli florets

Directions:

  1. Cut the brie round or wedge of brie into a wedge about 3 1/2-inches wide and 3 1/2 inches tall (or similar). Spread pesto over the top and add a white star if desired at the point. Place on your charcuterie board.
  2. Add a row of round crackers of choice so the row is a bit wider than the base of the brie.
  3. Roll goat cheese into balls about 1 1/4-inches wide then roll into chopped pistachios. Place them side by side in a row (slightly wider than the crackers) below the crackers on the board.
  4. Lay a turkey slice on plate then lay sweet red peppers (cut open to lay flat) side by side at the short end of the turkey slice then top with three asparagus spears. Roll it up starting with the short side to make a roll. Cut the roll into 1-inch-thick slices and place them cut side up in a row (slightly wider than the goat cheese balls) below the balls. Repeat with additional turkey slices, peppers, and asparagus to fill your row.
  5. Make caprese skewers by threading a cherry tomato on a toothpick followed by a fresh basil leaf and a mini fresh mozzarella ball. Place skewers in a row below the turkey.
  6. Place strawberries, point side down in a slightly wider row below the skewers.
  7. Fill the bottom of the tree with broccoli florets. Make tree stem with a stack of crackers.

I'm hosting our work holiday party this year - might have to make one of these as part of the appetizer spread!!
