Although it will never be a health food, I get fluffier and slightly healthier Chicken Flavor regular Rice-A-Roni by substituting three tablespoons of extra virgin olive oil for the same amount of butter called-for in the package directions and using a bit less water then the 2 1/2 cups suggested.
I use just 2 cups of water and it comes out better every time!
It's nice to find delicious ways to get more olive oil in our diets.
