When choosing celery, most people reach for the beautiful dark leafy green stalks. And while that is a good rule of thumb for lettuce, it's not such a good idea for celery. Yes, you want it green, but dark green celery, especially if the stalks are thinner, is very bitter.
While there are several reasons celery can be bitter, chief among them is that celery requires a lot of water to grow. It's also very high in nitrogen and without plenty water the nitrogen can turn celery bitter.
So next time you reach for a bunch of celery, choose succulent, bright-lighter green stalks, trust me, you won't be disappointed!
