Made from eggs, cheese, and a handful of veggies, they tend to be lower in carbohydrates (if you choose ones made without potato) and can be enjoyed hot, room temp or even cold!
I also find meatball recipes, like this one (https://www.sincerely-food.com/t5/all-recipes/greek-salad-bowl-with-tzatziki-baked-meatballs/ta-p/56...) tend to hold up well!

You sure have come to the right place for recipe inspiration! Here are a few of my favorite low-carb recipes that are perfect for batch cooking/make ahead. The first is sausage with yummy cheesy green veg - so satisfying! Soups are also a great option for make ahead and this one is packed with flavor. Finally, I totally agree with @Chomp_Chomp that frittatas are a great option also. Here is my favorite 'super simple' option. Happy cooking and let us know how things go!
