Hi all, Always open to hearing/reading about new and delicious food combos. Have been having success using different veggies in lasagna recently. Zucchini for noodles and even green beans in this last batch.

I’ve been using thin-sliced zucchini as the lasagna noodles and using different veggies in the tomato-based sauce. Adding oregano to the ricotta has added flavor too. My husband isn’t a big veggie fan and this has been a great way to get him to eat them. He doesn’t mind them when cooked this way.
