It can be hard to cook for one person sometimes! When I am cooking only for myself I usually look for a 2 serve recipe that will yield leftovers that I know/am pretty sure I will like (I can be a picky leftover eater!).
Lately I have been really loving the overnight oats game - I use 1/2 cup oats, 1/2 cup milk, and some flavorings (loving vanilla and cinnamon). I put them in a jar, stir it up, and let it sit in the fridge overnight. In the morning I top with some maple syrup, pecans, and fruit (blueberries are in season here so I am loving them). Then, if I am rushed I can just eat it on the way to the gym in the morning!
